Ingredients

  • 1 large aubergine (eggplant)
  • 1 tbsp smooth peanut butter
  • 1 tbsp sesame oil
  • 1 tbsp light soy sauce (or coconut aminos for a gluten-free option)
  • 1 tsp sugar
  • 1 tsp rice vinegar
  • 1 tsp minced garlic
  • 1 tsp minced ginger
  • 1 tbsp mild red chilli, chopped
  • Handful of spring onions, chopped
  • Sesame seeds for garnish

  1. Prepare the aubergine:
    • Slice the aubergine into long strips or rounds, depending on your preference.
    • Place the slices in a microwave-safe dish, cover with a lid or cling film, and microwave on high for 6-8 minutes, or until tender.

    • In a bowl, whisk together the peanut butter, sesame oil, soy sauce, sugar, rice vinegar, garlic, and ginger. Adjust the consistency with a splash of water if needed – it should be thick but pourable.
