
Introduction
If you're a fan of incredible, authentic Chinese cuisine, I have a delicious recommendation for you.
Recently, I was invited to Master Wei, the independent Chinese restaurant from the talented Guirong Wei, who recently starred in the latest season of the Emmy-nominated Netflix show Chef's Table.
Guirong is dedicated to showcasing the cuisine of her homeland province, Shaanxi (陝西), located in northwest China, and trust me, it's an experience you won’t want to miss.
Here, I'll talk about Dream Xi'an, as that was the location I visited (but owned and operated under the same person!)

Biang Biang Noodles: The Star of the Show

Whether you visit their Hammersmith or Tower Hill location, you’re in for a treat.
From the moment you step in, the menu will take you straight to the streets of Xi'an, with dishes that are both comforting and bold. If you're craving noodles, you’re in the right place.
I had the pleasure of trying the famous Biang Biang noodles, which are one of Master Wei's must-try dishes.

These hand-pulled, wide, chewy noodles are cooked to perfection and drenched in a hot, spicy sauce that’s just the right amount of heat. The texture of these noodles was everything — perfectly chewy, absorbent, and just downright satisfying.
The portion is huge too, and this big bowl is enough to feed two. Just look at how thick and long these noodles are. Incredible work!
They’re definitely the highlight, so if you’re going to order one dish, make it this one.

Xi'an Liangpi: A Refreshing Delight

Along with the biang biang noodles, I got to try a few more standout dishes.
One of the most memorable was the Xi'an Liangpi — cold, wide noodles made from wheat starch, which is traditionally gluten-free.
Now, a quick note for anyone with celiac disease: while the noodles themselves are made from wheat starch and technically gluten-free, always check with the restaurant about any cross-contamination risks. They may be safe traditionally, but it's always a good idea to ask if you're extremely sensitive to gluten.
The dish is served at room temperature with a spicy sauce, slices of seitan, chilli, and cucumber. It might look spicy, but it’s actually quite mild, and the texture of the noodles is refreshing.
For an even richer experience, I highly recommend the version with sesame sauce — it adds a creaminess that really takes this dish to the next level.
Other Commendable Dishes

Another dish you can’t miss is the delicious steamed pork bun.
This juicy, flavourful bun has a perfect balance of flavour and richness, while the wood ear mushrooms were served in this refreshing vinegary sauce that really balanced out with the other heavier dishes on our table.
We also tried the chicken in a spicy sesame sauce, where the chicken was really tender and juicy and the sauce was a mild spice with creaminess from the sesame sauce.
These three dishes are the perfect companions to your noodle feast.
Qi Shan Hand-Pulled Noodles
We never got to try this but if you're in the mood for something hearty and soupy, don’t forget to try the Qi Shan hand-pulled noodles with braised pork in a spicy soup.
This is also a classic for Shaanxi cuisine and one I'd recommend if you've still got stomach space!
Master Wei Locations: Convenient and Cozy Dining

Overall, the space itself was cozy, with a vibrant atmosphere, and the friendly staff will make sure your experience is just as amazing as the food.
And, with two convenient locations — Hammersmith and Tower Hill — you can choose whichever suits you best.
The restaurant is a true gem in London, bringing the heart of Shaanxi cuisine to the city.
Final Thoughts: The Ultimate Noodle Experience in London
So, do yourself a favor and get yourself down to Master Wei (or Dream Xi'an in Tower Hill).
Trust me, these noodles, and the rest of the menu, will blow your taste buds away.
