Ingredients

  • 4 salmon fillets, skin removed
  • 1 tbsp light soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp mirin, or honey
  • 2 cloves garlic, minced
  • 1 small red chilli, finely chopped

Optional broccoli side:

  • Tenderstem broccoli roughly rubbed in a little salt and sesame oil

  1. In a bowl, mix the soy sauce, honey, sesame oil, and lemon juice. Add the salmon chunks and marinate for at least 10 minutes to let the flavours soak in.
  2. If using, toss the broccoli florets with a pinch of salt and a drizzle of sesame oil. This will help the broccoli crisp up nicely in the air fryer.
  3. Thread the marinated salmon onto soaked bamboo skewers. If you’re cooking broccoli on skewers, do the same, or simply place it directly on the air fryer tray.
  4. Preheat the air fryer to 180°C (350°F). Lay the salmon skewers flat on a tray, and cook for 6-10 minutes (depending on your model of air fryer), turning halfway through. Place the broccoli on a separate tray or cook alongside if your air fryer has the space.
  5. If you want to add extra flavour, reduce the leftover marinade in a small pan until thickened and drizzle it over the cooked salmon.
  6. Serve the hot salmon skewers with steamed rice or noodles, and enjoy a quick, healthy meal.
