Easy Airfryer Salmon Skewers

Ingredients
- 4 salmon fillets, skin removed
- 1 tbsp light soy sauce
- 1 tbsp sesame oil
- 1 tbsp mirin, or honey
- 2 cloves garlic, minced
- 1 small red chilli, finely chopped

- Tenderstem broccoli roughly rubbed in a little salt and sesame oil

- In a bowl, mix the soy sauce, honey, sesame oil, and lemon juice. Add the salmon chunks and marinate for at least 10 minutes to let the flavours soak in.
- If using, toss the broccoli florets with a pinch of salt and a drizzle of sesame oil. This will help the broccoli crisp up nicely in the air fryer.
- Thread the marinated salmon onto soaked bamboo skewers. If you’re cooking broccoli on skewers, do the same, or simply place it directly on the air fryer tray.
- Preheat the air fryer to 180°C (350°F). Lay the salmon skewers flat on a tray, and cook for 6-10 minutes (depending on your model of air fryer), turning halfway through. Place the broccoli on a separate tray or cook alongside if your air fryer has the space.
- If you want to add extra flavour, reduce the leftover marinade in a small pan until thickened and drizzle it over the cooked salmon.
- Serve the hot salmon skewers with steamed rice or noodles, and enjoy a quick, healthy meal.
