Greek Strapatsada

Greek strapasada, aka kagianas, is a simple and flavourful scrambled egg dish traditionally enjoyed for breakfast or a light meal. It features ripe tomatoes, onions or shallots, and sometimes herbs like oregano or basil, all cooked together with the eggs. Feta cheese is often crumbled on top for a salty finish and a touch of creaminess. This dish is a delicious way to experience the fresh flavours of the Mediterranean.

This was really easy and very tasty, except it does take a bit of time to grate tomatoes, but with how tasty the dish is, I'd definitely say it was worth it so you should try this as well.

Ingredients

  • 4 plum tomatoes
  • 1 small red onion
  • 3 cloves garlic
  • 1 tsp smoked sweet paprika
  • 1 tsp sugar
  • 1 tsp Sherry vinegar
  • 1 tsp dried oregano
  • salt and pepper to taste
  • 50g feta cheese
  • 2 large eggs

Garnish

  • Chopped fresh parsley
