Where Does The Mochi Texture Come From?
Glutinous rice flour, also known as sweet rice flour, is the secret ingredient that gives these brownies their signature chewy texture.
Made from ground sticky rice, this flour is naturally gluten-free and can be found in most Asian grocery stores or online. Its unique properties make it perfect for recipes like mochi and other chewy desserts, and it pairs beautifully with the rich chocolate flavours in this recipe.

- 80g glutinous rice flour
- 80g sugar
- 2 tbsp matcha powder
- 1/2 tsp baking powder
- 120ml (½ cup) milk (or oat milk for a dairy-free option)
- 40g melted butter
- ½ tsp vanilla extract

1. Mix the Dry Ingredients
In a bowl, whisk together the glutinous rice flour, sugar, matcha powder (sifted, ideally), baking powder, and a pinch of salt until evenly combined.
2. Add the Wet Ingredients
Pour in the milk, melted butter, and vanilla extract, then mix until you get a smooth batter.
3. Prepare the Baking Dish
Lightly grease a small oven-safe ramekin or mini cake tin that fits in your air fryer. Pour in the batter, smoothing the top with a spoon.
Bang a few time against the counter to remove any large air bubbles.
4. Air Fry or Oven Bake to Cook
Place the ramekin in the preheated air fryer and bake at 190°C (380°F) for 15 minutes, or until the top is slightly crisp and a toothpick inserted comes out mostly clean.
*For oven baking: pour the batter into the prepared baking pan, spreading it out evenly. Bang the tray a few times to remove any big air bubbles.
Bake in a preheated oven at 175°C (350°F) for 50-60 minutes, or until a toothpick inserted in the centre comes out with a few moist crumbs.
5. Cool & Enjoy!
Let the brownies cool completely before cutting as the mochi texture become more set once it's cooled. Dust with some matcha powder on top for the ultimate green colour. Enjoy!
