The best part? The crispy cheese crust hardens as it cools, giving every bite a perfect cheesy crunch that’ll have everyone coming back for seconds.
Why Grana Padano?
Grana Padano is a hard, cow's milk cheese that’s a little milder than Parmigiano Reggiano but still packed with incredible flavour. It’s aged for at least 9 months, giving it a rich taste that’s perfect for crusting your potatoes.
Its crumbly texture makes it ideal for getting that crispy, golden crust that adds both texture and a burst of cheesy goodness to each bite.
These cheese-crusted baby potatoes are an absolute game-changer. Whether you're serving them alongside a juicy roast or just snacking on them by themselves, they’re sure to become your new favourite dish.
So, grab those baby potatoes and get baking - you won’t regret it!
Ingredients
- 400g baby potatoes (choose small, waxy potatoes for the best texture)
- 50g Grana Padano cheese, finely grated
- 2 tbsp olive oil
- 1 tbsp garlic powder
- Handful of fresh parsley, finely chopped
- Salt and freshly ground black pepper to taste
Pair it with
Instructions
1. Preheat the Oven: Set your oven to 180°C (350°F) and line a baking tray with parchment paper.
2. Grate the Cheese: Finely grate the Grana Padano cheese and set it aside.
3. Prepare the Potatoes: Wash the baby potatoes thoroughly and halve them so they’re all similarly sized.
4. Season the Potatoes: Place the potato halves into a large mixing bowl. Add olive oil, salt, pepper, minced garlic, and a small handful of the grated cheese. Toss everything together to coat the potatoes evenly.
5. Prepare the Tray: Spread the remaining grated cheese evenly across the lined baking tray. Place the seasoned potato halves flat side down on top of the cheese.
6. Bake: Pop the tray into the oven and bake for 25 minutes, or until the cheese is golden and melted, and the potatoes are tender.
7. Cool and Set: Remove the tray from the oven and let it cool for about 10 minutes. This allows the cheese crust to harden and become extra crispy.
8. Serve: Carefully lift the potatoes off the tray (a spatula works best) and garnish with freshly chopped parsley. Serve piping hot and enjoy!
Tips for the Perfect Cheese-Crusted Potatoes:
- Cheese: Grana Padano is a fantastic choice here due to its nutty and slightly tangy flavour, but you can use Parmigiano Reggiano if you want an even sharper flavour. Both are perfect for creating that irresistible crust!
- Make it Extra Crispy: If you want the potatoes even crispier, give them a quick broil at the end of the baking time. Just watch them carefully to avoid burning!
- Add a Kick: For an extra layer of flavour, consider sprinkling a little smoked paprika or chili flakes on top before baking.
- Make Ahead: You can prep the potatoes up to the point of baking, store them in the fridge, and then pop them in the oven when you're ready to serve.
