Shanghai Spring Onion (Scallion) Noodles 葱油拌面

Fragrant, delicious and *insanely* easy. You are just 5 ingredients away from this bowl of deliciousness. Just because it’s free from meat doesn’t mean it’s any less tasty. Of course I needed to add chilli because it’s just not the same without spice 🌶 but traditionally it comes spice-free, so adapt it how you like.

Frying the slices scallions always makes my entire kitchen smell sooooo good all day long. You can also use more oil to make more fragrant oil to use for other dishes. It’s totally a great alternative seasoning oil to have.

Ingredients

  • 200g noodles of your choice
  • 2 stalks of spring onions
  • 3-4 tbsps cooking oil
  • 2 tbsps light soy sauce
  • 1 tbsp dark soy sauce
  • 1 tsp granulated sugar

Optional: Chilli oil to serve. See separate chilli oil recipe

Instructions

  1. Heat the vegetable oil in a shallow frying pan over medium heat. Add the spring onions and fry for 2-3 minutes until they are golden brown and slightly crispy. Once fried, remove them from the pan and set aside to cool. These will be used as a garnish later for an extra boost of flavour and texture.
  2. While the spring onions are cooling, bring a pot of water to a boil and cook your noodles according to the package instructions. After boiling, drain the noodles and rinse lightly with water to prevent them from sticking. Set the noodles aside.
  3. Let the oil in the pan cool slightly, then stir in the soy sauce and sugar. Mix well to combine the ingredients and create a sauce. Taste and adjust the salt levels according to your preference. If you like your noodles spicy, feel free to add a spoonful of chilli oil at this point.
  4. Pour the soy sauce mixture over the cooked noodles and toss thoroughly until the noodles are evenly coated with the sauce. Make sure to mix well so each noodle is infused with the rich, savoury flavours of the sauce.
  5. Top the noodles with your fried spring onions or use fresh spring onions if you prefer a more subtle flavour. For an extra kick, drizzle some chilli oil over the top. Serve hot and enjoy!

Tips:

  • This recipe works well with a variety of noodles like ramen, udon, or even rice noodles for a gluten-free option.
  • If you enjoy spicy food, a dash of chilli oil or freshly sliced chilli can elevate the dish’s flavour.
  • Store your noodles in an airtight container in the fridge for up to 2 days. Reheat with a splash of water or soy sauce to bring back the flavours.
