Ugandan Egg Rolex

Around the World in 80 Eggs: day 32

The Ugandan Rolex is a popular handheld breakfast and street snack sensation. The name comes from "rolled eggs" merging to become "rolex" and it's essentially a warm flatbread, typically a chapati, wrapped around a delicious omelette. This omelette is packed with chopped onions, tomatoes, and cabbage. It's a quick, affordable, this is my attempt at making this Ugandan classic.

Ingredients

  • 2 Chapatis (shop-bought or homemade)
  • 1 tbsp neutral cooking oil
  • 2 large eggs
  • Half a large tomato, finely diced
  • Half a brown onion, finely diced
  • Handful of chopped coriander leaves (cilantro)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large bowl, crack together the eggs and beat them together with the salt and pepper until everything's well combined. Now, add the chopped tomato, onion, shredded cabbage, and coriander leaves. Give it a good stir to ensure all the ingredients are evenly distributed.
  2. In a large frying pan, heat up the cooking oil over a medium high heat and pour half of the egg mixture into the hot pan. Swirl the pan gently to make sure the egg spreads evenly and coats the bottom of the pan. Let it cook for 1-2 minutes, or until the bottom is set and no longer runny.
  3. Carefully slide the chapati onto the uncooked side of the omelette in the pan and press to combine the chapati with the omelette. Flip the chapati over so the egg side is facing up.
  4. Using a spatula, gently roll up the chapati and press down slightly to secure it and make sure it all sticks together nicely. Continue cooking for another 1-2 minutes, or until the omelette is cooked through and the chapati is golden brown and crispy on the outside. Remove from the pan and repeat for the other chapati and egg.
  5. Enjoy your homemade Ugandan Rolex while it's nice and hot, with a side of your favourite dipping sauce.

Top Tips:

  • Feel free to throw in different herbs and spices to create your own unique flavour combination.
  • For a softer rolex, once the chapati is flipped over roll it up and remove so that it doesn't get too crispy.
